Heart-shaped pavlova with vanilla cream & poached prunes

Ingredients  

  • 3 egg whites
  • 340 gr of sugar (1 cup + 90gr)
  • 1 tbsp cornstarch
  • 1 tsp vinegar
  • 1 cup water
  • 1 tbsp vanilla
  • 1 cinnamon stick
  • 1 star anise
  • 1 cup of California Prunes
  • 1 cup of whipped cream or vanilla chantilly cream

Preparation

Meringue:
  1. Whisk 3 egg whites, 90g sugar, 1 tbsp cornstarch, and 1 tsp vinegar for 5 minutes.
  2. Pipe meringue hearts and bake at 300°F for 45–60 minutes.
Prunes:
  1. Boil 1 cup sugar, 1 cup water, 1 tbsp vanilla, 1 cinnamon stick, and 1 star anise for 3 minutes.
  2. Add 1 cup of rehydrated California Prunes and poach for 10 minutes. Cool completely.
Assembly:
  1. Layer meringue, vanilla or whipped cream, poached prunes, and syrup. Enjoy!
