In a big bol, whisk together the flour, baking soda, ginger, cinnamon and salt. Set aside
In a stand mixer at low speed, mix together the vegetable oil, 1/2 cup of sugar, the egg, the molasses and maple syrup until the mixture is smooth. A little tip would be to first measure the vegetable oil and the the maple syrup and molasses. This will ensure that the molasses and the maple syrup will not stick to the cup.
Add in the dry ingredients a little at a time until smooth and completely incorporated.
With your hands, make small balls with about 1/4 cup of the dough. Place the remaining sugar in a bol and roll the little balls created in the sugar.
Bake in the oven at 350°F for 12 minutes or until golden brown with a soft center. Let them cool down for 5 minutes.
