Christmas Speculoos Cookies

Ingredients

  • 345 grams of room temperatured butter
  • 440 grams of brown sugar
  • 1 egg
  • 125 grams of almond powder
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cardamom
  • 1/2 teaspoon of ginger
  • 2 teaspoons of cacao
  • 420 grams of all purpose flour
  • 4 to 6 tablespoons of milk

Instructions

  1. Cream butter and brown sugar together.
  1. Add the egg.
  1. Mix all dry ingredients together. Set aside.
  1. Add 1/2 the dry mixture to the butter. Then add half the milk. And continue on until everything is mixed in.
  1. Refrigerate for an hour or two before rolling out the dough.
  1. Roll out the dough and cut out the desired shapes with the cookie cutters.
  1. Bake in the oven at 350°F for 12 to 14 minutes depending on the size of the cookies. Check on them often to make sure they are nice and golden and don't burn since the color of the cookies are brownish and might be confusing.
